Peat layers form on bogs over thousands of years and are used to smoke barley grains during the drying process. Growing the Barley: We’ve mentioned all scotch is made with barley. Barley is grown throughout Scotland, but not every distillery has their own barley harvest or even their own malting floors. Most distilleries buy their barley from nearby farms or distilleries with larger fields. A huge portion of Islay barley comes from the distillery Port Ellen, for example. Singleton is a creation of the modern, 21st-century age of single malt – a determined effort by owner Diageo to create a brand vehicle to take on the might of Glenfiddich and The Glenlivet. Launched in 2005, this new-generation blended malt originally took all its whisky from three William Grant-owned distilleries: Glenfiddich, Balvenie and Kininvie.

However, double malts can sometimes be expensive, especially with the collaboration of two famous brands. When two distillers collaborate to make scotch, the terminology “double malt” is usually used in making the product. Another name on the rise is Diageo’s Singleton brand which, it’s important to note, covers not one but three malt distilleries: Dufftown, Glen Ord and Glendullan. Their combined sales are featured here, since no individual breakdown is available.
