Brandy-Based: Many of the original curaçaos had either a brandy or rum base and a few orange liqueurs continue to use brandy or Cognac. The French liqueur, Grand Marnier, is the best known and was originally called "Curaçao Marnier." It uses Cognac, is often preferred by bartenders, and can be drunk on its own. Its Italian counterpart, Gran Gala has a brandy base and is comparable in quality. Both liqueurs are 80 proof. The difference between Curaçao Liqueur and Triple Sec is a widely discussed topic in the bartender world. It is almost impossible to define Orange Liqueur without getting into a heated discussion. Like many things in the bartender world, not much is set in stone and almost everything is up for discussion. To make things clear, we decided to break it all down in one article. Regulations allow cordial producers creative license with not only the spirit and flavoring agent, but also how they’re incorporated. Some add flavoring agents after distillation by one of several methods. Infusion involves steeping the flavor source; maceration entails more aggressive crushing of the flavor components before steeping; percolation pumps water or spirits over the ingredients to extract flavors. Finally, flavor can be added by compounding, simply adding the flavoring extract to the spirit. Heartier flavoring agents such as seeds and flowers may be distilled along with the distillate, often for the second distillation, similar to the gin-making process. The owner of Pierre Ferrand told me the name refers to the three separate distillations of the peels and spices that go into making it, which are later blended. It gets its particular flavor from a bitter, green-skinned variety of oranges, called Curaçao (or Laraha) oranges, whereas most other orange-based liqueurs are made from other types of sweet or sour oranges. Like many other spirits and liqueurs, Curaçao and Triple Sec have alternative uses. For once, you can use stronger, higher-proof bottles as antiseptics in an emergency. However, they both are better when used for cooking or making desserts. The sweetening requirement is what makes cordials distinct from dry flavored spirits such as gin. In the United States, where “cordial” and “liqueur” are used interchangeably, regulations require that they contain at least 2.5 percent sugar by weight and be made from “fruits, flowers, plants, or pure juices therefrom, or other natural flavoring materials, or with extracts” of those materials. In Europe, cordials refer to non-alcoholic drinks. We use the terms based on U.S. regulations. However, many established producers of Triple Sec can are at the upper end of the scale. For instance, Combier, Cointreau, and the closely related Grand Marnierall have an alcohol content of 40%.
