About this deal

Allow the rice to cool and then mix in all the other ingredients, tasting to check the seasoning and season with salt and pepper as required. Breakfast is simple - cereals, porridge, berries, yoghurts , non dairy if they are dairy free but worth a try for anyone , almond or oat milk , toast etc. With over 250 dishes, Delia's Vegetarian Collection illustrates how versatile vegetarian food can be and offers the reader the ultimate collection of recipes. Spoon half the filling into a rough sausage shape down one of the long sides of the pastry, then paint the opposite long side with egg or milk. Initially I wasn't overwhelmed - I find it a bit naff to find recipes clearly written for imperial measures and then converted into odd metric.

The obvious solution, of course, is to use a plant-based meat substitute, and Mob Kitchen recommends a pea, rice and soy protein-based brand for their recipe, which is mixed with sage, onion, chopped chestnuts and apricots, and nutmeg to produce something that looks much more like the fillings with which I’m familiar. Laura Fyfe’s recipe for Jamie magazine also contains cheese (stilton this time), but the base is roast butternut squash mixed with breadcrumbs and chopped walnuts, which makes it much more adaptable – you could easily leave out the cheese, or replace it with a plant-based substitute without changing the flavour profile too much.Filled with mouth-watering dishes, even meat-lovers will give a second glance at this beautifully presented and illustrated recipe book. This recipe is specially for my friend Lilie, who is a vegetarian and said I couldn't possibly not include a nut roast. I say ‘cook’, he usually heats something up, unless he’s making a roast (unfortunately, although he makes a fantastic roast dinner, he refuses to make one in the warmer months) but this Bank Holiday weekend, I was treated to a proper homecooked dinner, courtesy of Delia Smith’s Vegetarian Collection. But here are Crepes Suzettes, Bananas Baked in Rum, Crème Brûlé and Strawberry and Balsamic Vinegar Ice Cream to remind us that some of the best things to eat have always been meatless. More over I love it when my son James who used to be the pickiest eater ever, sits down to dinner and says "Mum this is delicious". Cut this oblong into three strips and divide the filling also into three, making three long rolls the same length as the strips of pastry (if it's sticky, sprinkle on some flour). Delicious as these are, however, they’re far softer and sweeter than a traditional sausage roll, and I’d like to find something that doesn’t feel so much like a vegetarian alternative. At last - what every vegetarian has been waiting for: a vegetarian cookbook from Queen of Cooks, Delia Smith.
