Sugars that are released slowly into the bloodstream are low glycemic in nature and the most beneficial to consume on a regular basis. Raw coconut nectar is one of these sweeteners. It contains mostly sucrose with smaller amounts of glucose and fructose. It is likewise high inulin, a prebiotic fiber that is believed to also help slow absorption rate. On the one hand, it is derived from a natural source. On the other, it is still considered an added sugar and isn’t entirely healthy. Here in the U.S., however, it has only recently become popular as an alternative natural sweetener that has some added benefits over other varieties. For one, it tastes amazing! This is just one type of molasses. It’s made from the dark leftover liquid after cane or beet sugar has been crystallized. Really, the nectar produced from these blossoming stems should be called "coconut blossom nectar" as the word "coconut nectar" leads one to believe the syrup comes from the actual fruit or coconut meat, which it does not. Natural coconut flower sap contains 1.5% fructose when collected from the blossoms. As the water is removed from the sap, the fructose content of the final liquid only reaches about 10%. In comparison to other sweeteners, such as honey, sugar and agave, this makes coconut nectar a low fructose sweetener.

Maple syrup is made using the sap of the maple tree. Like with coconut nectar, it is boiled up to evaporate off the water. The syrup is what remains.
