One top tip is if they've been in for the 25-30 minutes, and you're still not sure, let them cool outside of the oven fully and then put them in the fridge for at least an hour to 'set'. It can firm them right up! Over night in the fridge is best. I have a thing for blondies as they are such an easy traybake to make, but also just so good! They are fudgey, sweet, and incredibly moreish. With a custard twist, they are even better! Honestly, I know you will enjoy them. For this recipe I used a 9″ square tin (23cmx23cm), and lined it with parchment paper. You can easily use a ‘brownie’ tin that is 7×11″ as this will take the same time, and have the same results. I mean… I couldn’t resist. You guys LOVED my Biscoff Rice Krispie treats, and my Nutella Rice Krispie treats… so why not make an easter version?! Look at how good they look! Also, they are so simple to make. Almond and jam… a delicious combination. Usually there is a pastry base, a jam layer, and almond filling, and decoration on top. These blondies are basically the same, just without the pastry!

SERVE. Slice it up in 9 or 16 pieces depending on how many people you plan on serving it to. I was instructed to cut BIG pieces because my kiddos have eyes bigger than their teeny little stomachs. How to Make It

This is a very rich, moist cake with an intense chocolate flavor. You can make it more mild by substituting regular cocoa for the Dutch-process cocoa (which is really rich) and using boiled water in place of espresso. But if you want rich, keep it as it is. Like always, my bakes are customisable and delicious – you can use any other biscuit you fancy! Don't allow the baking pans to touch each other or the walls of the oven. Those parts of the pan might cook faster due to the extra heat. For the best results, make sure you have enough space in your oven to bake the cakes without touching anything. Shiny metal pans and dark metal pans cook differently. Dark pans cook the outsides of the cake faster than the shiny ones do. Know your pans and adjust accordingly: turn the oven down 25 F when using a dark metal pan. Make sure to zest your lemons first, and then juice them – the amount of lemons may vary because of the sizing – but it’s about 5 lemons you use. I grate my lemon zest on the fine one so the pieces aren’t too large! I’m right there with you!
