There are a few types of couscous, including pearl couscous (also known as Israeli couscous), which I use in this awesome couscous salad or serve as a side with a little lemon zest. But today, we're talking about Moroccan instant couscous. It's the smallest size couscous made of fine granules. And because it's been already steamed and dried for us, this couscous requires very little effort to prepare and can be ready in the blink of an eye. This was during the 13th century and the documentation historians refer to is in his renowned book The Travels of Marco Polo . For many, this is how pasta in Italy came to be. Unfortunately, all these stories about the famous explorer bringing pasta to Italy relies heavily on retelling because his book’s original text has long been lost.
