Mezcal is made from over 30 agave species, varieties, and subvarieties, in contrast with tequila, which is made only with blue agave. [20] Of many agave species that can be used to make mezcal, seven are particularly notable. [14] There is no exhaustive list, as the regulations allow any agaves, provided that they are not used as the primary material in other governmental Denominations of Origin. [21] The term silvestre "wild" is sometimes found, but simply means that the agaves are wild (foraged, not cultivated); it is not a separate variety. Our story with Mezcal Unión began with a distribution partnership in 2016 and we are now taking it to a new level. The complex flavour profile of the mezcal recalls the smoke of whiskey, the varietals of wine, and the blendability of gin. Produced by a group of families who have been growing agave and creating mezcal in the San Baltazar Guelavila region of Oaxaca for generations.

Mezcal, unlike tequila, can be made from a variety of some 30 different agave variants (not just Blue Weber agave). In that sense, it can be argued that its range of flavors and styles is a little more far-reaching. Flavor-wise, mezcal is to tequila as scotch is to whisky. It’s smoky and earthy, made from the piña, or heart of the agave plant. Presently, Mezcal Unión crafts two kinds, both sourced from agave grown in San Baltazar Guelavila, Oaxaca. El Joven is from 8-to-20-year-old plants, specifically the Espadín and Cirial varieties. El Viejo uses Espadín and Tobalá agave of the same age. Monte Carlo Blush (ABV 13.5%) is a light, crip, balanced and refreshing wine suitable for all dining occasions while Monte Carlo Prestige (13.5% ABV) is a more indulgent rosé perfect for special moments, grown on the slopes of the Cadiere d’Azur.
