Once macerated we slow distil them both. We don’t use the term “slow distil” for marketing, in fact, we run the equipment over a longer period of time 15-17 hours, compared to 7-9 hours, we get a better differentiation of flavour fractions. This means each flavour profile can be more defined. These are all collected together in a tank and then diluted with demineralised water to bottle strength – 43%. We use demineralised water for consistency - Scottish water is wonderfully soft but demineralised water ensures a minimum concentration of ions, such as, Calcium hydrogen carbonate. These ions interact with flavour compounds and can affect final flavour. Instead of having to constantly test the water table for fluctuations in ions we strip them via demineralisation. The single malt is a new annual release, limited to 8,000 bottles. The expression rests for an initial period in American white oak ex-bourbon barrels. USP: This is Glenfiddich’s fifth expression in its The Experimental Series. The new variant sees Glenfiddich collaborate with the Temperley family, founders and owners of The Somerset Cider Brandy Company, to create a single malt finished in Somerset pomona spirit casks. NB is a small, purpose-built distillery and gin school in the heart of some of the best scenery the south east coast has to offer. The palate mirrors the nose starting with clean pine notes, followed by bright orange and citrus, finishing smooth and clean. USP: Sunlight is the brewery’s “first-ever lite lager” with a lower abv than regular lager. Brewed with summer in mind, the lager is said to be “light, mega sessionable, and easy-drinking” with a blend of wheat, flaked torrefied maize and lager malt.

The Secret Herb Garden Distillery

At the end of the experience, visitors will fill, label and name their unique creation to take home and enjoy in a branded Darnley’s gift bag. USP: Claire Murray, co-founder and co-director of Dunnet Bay Distillers, said: “The chosen botanicals include lemon balm, clover, lemon thyme, pineapple sage, meadow-sweet, and elderflowers. It’s a light, bright, citrusy and herbal spirit that captures the essence of our summer garden.” USP: In a first for the brand, the combination of vodka with lime and soda will join the Slingsby Solo range which consists of six gin and mixer combinations, launched last year.

Fans of both whisky and gin will enjoy this newly opened visitor experience at the Benromach Distillery in Speyside. Winners of the 2023 Scottish Gin Awards announced - including North Uist Distillery and Edinburgh Gin USP: Wines from the Tauxières terroir make up the majority of the Champagne blend, with Pinot Noir grapes at its core. It features tasting notes of apricot, peach and exotic fruit, alongside acacia honey and spices.

We offer tours which last an hour and are with a distiller (rather than a tour guide) and at the end of the tour we present the 'science pour'. This is a pour using explanations of differing density as to why you can create a fresher and brighter gin and tonic. The tour delves into the history of gin, the history of our family, then into the science of botanicals - this is a time where we interact and run through the flavour profiles with botanicals. Finally we visit our state of the art bottling line (the labelling system is the impressive part).

The Master Tour allows visitors to meet one of Oro’s distillers, who will explain exactly how Oro Gin is made (including the science behind the process) and how to make the perfect gin and tonic. Producing their first small batch of just 200 bottles in 2013, Crossbill are now running at full production in their relatively new, purpose built home near Glasgow's Barrowlands. Our biggest achievement is winning 10 international awards in our first 15 months of production. These awards range from IWSC, World Gin awards and San Francisco. Through these awards we have been able to differentiate from others within the busy gin market. One of my favourite moments was successfully exporting our first pallet of gin to Spain and in doing so, entering the Spanish market. The visitor centre offers three great tours: a Gin Discovery tour, Gin Connoisseur tour and the Gin Making tour. Caorunn gin, created at Balmenach distillery in Speyside, is another of the big whisky distillery gins.From the capital to the Highlands and Islands - including big names and small, craft distilleries - you may be able to visit your favourite brand and buy a bottle after a tour. During the tour, visitors will learn about the Darnley's story, meet Dorothy the copper still, find out more about the history and botanicals before trying the three gins. When the Summerhall Distillery opened its doors in 2014, they became the first gin distillery to be established in Edinburgh for over 150 years. Seven Crofts, which is a small batch dry gin hand distilled in Ullapool, is a vibrant gin with notes of perfumed forest fruit, spicy hints of coriander and pink peppercorns - giving it a long, warm finish.
