Variation: To make ricotta and maraschino cherry ice-cream, make up a batch of the ricotta ice-cream but substitute the orange flower water for a teaspoon of vanilla extract. We were on a family driving holiday and dropping my sister off with a French family for the summer, and during a few days there I tasted peach ice cream and banana ice cream.

As a baker, I feel most comfortable with the reassuringly uniform building blocks of any baker’s pantry: flour, sugar, and fat in familiar shades of cream and beige.Do this twice, and then consecutively with a big metal spoon or spatula every 30 minutes until uniformly frozen.
