About this deal

Distilled from molasses using a column still, it has a pleasant aroma of biscuits, hazelnuts, sweetness, and vanilla.

Indigo’, inspired by the colour blue crafted by the ancient Maya using the Indigo Flower (anil) and also the colour of Tlaloc the Mayan God of rain. From the Cihuatan valley in El Salvador come the closely guarded secrets and legends which are now revealed through the aged Indigo rum to those curious spirits with a thirst to explore. The speciality of this human and artisanal distillery, also resides in its self sufficiency since, in addition to the sugar and molasses it produces, it generates its own electricity from bagasse, the fibrous residue of sugar cane. As the offshoot of long established sugar producer Ingenio La Cabaña they haven't been under the same pressures as some new distilleries and have had the luxury of allowing their rums the time needed to mature and the Indigo 8 year old was their first release, starting in 2015.

Matured solely in ex-Bourbon barrels the Indigo is smooth and elegant with hints of creamy dulce de lache, vanilla, cappuccino, cocoa, lemongrass and hazelnut. Cihuatán Indigo is an 8-year-old rum, produced in El Salvador by the Licorera Cihuatán distillery, with an ABV of 40%. In Mayan language, Cihuatán means "the earth next to the sleeping woman" in reference to the Guazapa Mountain whose lines reveal the shape of a woman, goddess who would have conferred wealth and fertility to the surrounding lands. This is a very classy 8 Year Old column distilled rum from a relatively new player in the rum game, Ron Cihuatan. This approach has allowed them to create one-of-a-kind rums, such as Cihuatán Xaman XO, uniquely finished in Mayan Ceiba casks.

The beautiful indigo blue that adorns the bottle and gift box of this bottling is considered the sacred colour of this deity. Indulgent notes of oak wood, sweet vanilla, dark chocolate, hazelnut cappuccino, butterscotch and creamy Dulce de Leche. The name "Indigo" was inspired by the color blue, which was crafted by the ancient Maya using the Indigo flower (añil).In the heart of every bottle of Cihuatán Indigo lies the Sleeping Woman, Mayan goddess and guardian of the Cihuatán valley. This rum is aged according to the Solera method, in American oak barrels that have contained bourbon The youngest eaux-de-vie are at least 8 years old. The only distillery in the country, it has mastered the manufacturing of its rum which it produces from local raw materials which express all the richness and complexity of the landscape. Cihuatán Indigo presents tasting notes such as Vanilla, Cappuccino, Dark Chocolate, Lemongrass, Hazelnut and Artisanal Dulce de Leche, and it can be enjoyed neat, with a mixer or in a cocktail, it is very versatile and easy to mix. This Rum Cihuatan Indigo comes directly from its inspirations from Maya culture, indigo blue is a color frequently found on frescoes of Mayan temples.It offers excellent value for money and is considered a "crowd pleaser" due to its versatility and appealing flavor profile.

A less complex body and a shorter tail are balanced by a pleasant sweet taste that will satisfy even less demanding rum drinkers. Vanilla and Roasted Creamy Coffee come through alongside undertones of Dark Chocolate before a Caramel like finish.

The nose of this classical Don Papa is very fruity, dominated by notes of mandarin orange, complemented by apricot, raspberry and green banana. Local legend suggests that many centuries ago, a Mayan goddess came to the valley and endowed it with fertile soils and riches.
