You can control both temperature and cook time from Wifi and bluetooth, which means that you can control everything you need on the grill even when you’re down the street partying it up with the neighbors or at a soccer game hours before dinner. It’s not a huge issue if you’re throwing some burgers on the grill for 10 minutes, but it became a little annoying when trying to keep an eye on temps during a recent 7-hour pork rib smoke session. However, ensure you don’t use more than 1.5 pounds of charcoal if you intend to mix in wood chunks. And that’s it. I hope you really enjoy the 1050! I don’t think there is a water pan that comes with it, but I could be mistaken. I cook sometimes with and sometimes without a water pan. It really depends on what I’m cooking. If I’m looking for some hardcore bark on the meat, I don’t use a water pan. I do like to use a water pan as a heat sink though. When I’m cooking with a unit that has potential fluctuations in temperature, I find that a water pan can keep the swings from being as extreme. If I’m using a smoker that doesn’t have a water pan, I’ll just fill up one of my cast iron pans, fill it with water and I’m in business. Best wishes! I feel like the SS inserts are not worth the cost, especially if they are failing too per user reports. The reports still seem to indicate this is a very unit specific issue, in my view, depending on user usage, temps, and burn times, and not necessarily a widespread problem.
