Callebaut's chocolate callets are shaped so they can be melted and tempered easily. Each callet has a large surface area allowing it to melt evenly and consistently. Callebaut's callets are also great when used as chocolate chips for baking! Ruby chocolate has a taste that has been described as slightly sweet and sour, which is comparable to that of berries, but the chocolate’s main characteristic is its acidity and has been rated between milk and white chocolate.

White chocolate does not contain any cocoa mass but is made from cocoa butter, milk solids, sugar and usually with the addition of vanilla. Cocoa solids in Callebaut milk chocolate can vary from around 30% to 40.7% in the latest addition to the Callebaut milk chocolate range – POWER 41 – which is which is much higher than the others in the range and also lower in sugar. Callebaut Ruby Chocolate, which is pink in colour and sometimes referred to as pink chocolate, was unveiled by Callebaut as a new fourth chocolate in 2017 and is made from ruby cocoa beans. Callebaut 811 contains a minimum 54.5% cocoa solids, 36.6% cocoa butter and is dairy free and therefore suitable for vegans.
