Life for Tarquin Leadbetter wasn’t always punctuated by sweeping views of the ocean and copper stills bubbling away. At 23, he had trained as a chef at Le Cordon Bleu, but the view from his grey office in the City of London was very gloomy, indeed. He says, “I’ve always had a passion for developing, combining and balancing flavours. To make a gin that evoked the warm nostalgia of a Christmas spent in Cornwall, Tarquin and his team started with the botanical blend of their original Cornish Dry Gin. Then, taking inspiration from the ingredients they love cooking with as the festive season approaches, they built a spirit rich with the flavours of this magical time of the year.

The Tarquin’s Cornish Pastis expression, for example, contains botanicals that react to pH changes. When tonic water with a different pH level is added, the gin can transform its colour. This unique characteristic creates an intriguing visual experience and enhances the enjoyment of the drink. During the summer, when the sun is shining, there’s no better place to be than Cornwall,” says Tarquin Leadbetter, head distiller and founder of Southwestern Distillery. “But there’s also something very special about Cornwall during the depths of December – the coastline seems even more wild and rugged, and we wanted to capture a little piece of that in our Cornish Christmas Gin.”
