About this deal

Founded in 1973 by Keizo Saji, Suntory founder's son, Hakushu Distillery is located at the foot of Mount Kaikomagatake the heart of a lush preserved forest. Each and every Member must be of legal drinking age in its country of residence to be allowed to use the Service. If no such law exists in a Member’s country of residence, the Member has to be over 21 years old to use the Service. By using the Service, and by creating an account you represent, warrant and confirm that you are of legal age. In 1929, Torii hired Masataka Taketsuru to create the world’s first Japanese whisky. They got it wrong. The expression, called Suntory Shirofuda, tasted too much like Scotch — too peaty, too powerful. Torii realized the Japanese palate didn’t want ultra-smokey peat bombs; it wanted finesse. So they made what has since become the most popular whisky Japan: Suntory Kakubin. It’s light, punchy and floral, the baseline for all Japanese whiskies to come. The most popular Japanese single malt in the world was also the first. Yamazaki 12 is primarily made up of whisky aged in American oak and ex-bourbon casks, with trace amounts of whisky coming from Olorosso or Mizunara casks. For Westerners, this lends it a slightly more familiar flavor — at least initially. What follows are the rich, standard markers for Japanese whisky: delicate fruit, light spice and a long, sherry-driven finish.

Those flavours then build to a pleasantly woody and natural finish, with characteristic sandalwood, dried coconut and clove. A surprisingly sharp sweetness rounds things off: it reminds me of konpeitō, Japanese sugar candies. Although maybe not be the first Spirit you would think of when Japan is mentioned; the Japanese make one of the best types of whisky in the world. It’s heavily influenced by scotch but with smoother and delicate notes. In February 1899, Shinjiro Torii — the father of Japanese Whisky — opened a general store in Osaka, Japan, that traded in imported wines. Within a decade, Torii began producing his own sweet grape wine called Akadama Port Wine, which became wildly popular throughout the country. Following World War I, Torri — fascinated by whisky his entire life — decided to expand his business and began constructing the Yamazaki Distillery, Japan's first-ever whiskey distillery.

The first of these special releases is Yamazaki 18 Year Old Mizunara, a potently Japanese expression from Japan’s oldest whisky distillery. The most luxe of Suntory’s whisky holdings also happens to be its most Japanese. Hibiki, which first hit shelves in 1989, was designed as a more palatable alternative to blended Scotch, meant to be sipped neat or over ice. The Japanese whisky producer has released the limited edition Yamazaki 18 Year Old Mizunara and Hakushu 18 Year Old Peated Malt, which are both bottled at 48% ABV.

Whisky aged in Mizunara casks is thought to need more time to reach its potential than traditional aging types; thus, the older the Hibiki expression, the more Mizunara characteristic. In this case, that means a spirit with a weighty body, heavy coconut and sandalwood aroma and a balanced sweet- and spice-driven taste profile. Each Hibiki expression is a blend of dozens of whiskies produced at all three of Suntory’s whiskey-making facilities and, as with each Suntory whisky brand, may contain spirit aged in new American oak barrels, Spanish Olorosso sherry casks, ex-bourbon barrels, ex-wine casks and the legendary (not to mention extraordinarily expensive) Japanese Mizunara oak barrel. The illustration features the distillery in deep copper tones from a low angle, looking up. This expression is the exact same base spirit as 12, just six years older. It’s also three- to five-times the price. The 18-year-old channels the 12-year-old bottle’s freshness, and goes deeper. It’s fresh herbal notes become dried herbal notes and the citrus is replaced with a big, ripe sweetness. The peat is still there, but shows up more on first tasting than it does near the end of a glass. Surrounded by lush nature, the distillery benefits from abundant water filtered through the granite layers fed by the Ojira and Jingu rivers, and a humid microclimate with four distinct seasons favoring the aging of whiskies.

Hakushu 18 Year Old Peated Malt is comprised of meticulously selected malt whiskies all aged for a minimum of 18 years. As the name implies, it places a unique emphasis on peated whisky, using peat imported from Scotland to malt Japanese barley – a distilling challenge made possible by the Hakushu distillery’s pure and unique water, which softens the whisky’s signature smoky taste. It too is aged in mizunara casks. The Service has been prepared by us solely for information purposes to Members and the Service is based on information we consider reliable and we obtain the contents of the Service from a number of different third party sources (including Contributions), but we do not endorse, support, represent, warrant or guarantee the completeness, truthfulness, accuracy, or reliability of the Services and any information therein. On the nose, ripe green apple, sage and licorice abound. It’s bright and ever-so-slightly spicy. It’s undoubtedly smoky, but in a comparatively subtle way: it’s not a massive smoke bomb, nor does it hide the peat away. It actually reminds me a bit of tarte flambée, thanks to its funky, meaty and sweet notes.
