It’s then blended with Dartmoor water before being filtered through carbon to remove most of the colour, leaving a white rum.

On the nose, rich notes of velvet caramel and tamarind are balanced with light and floral tones of toasted coconut and violet. A blend of 5, 8 and 12 year finely aged 100% column still rums from Barbados. Rich, indulgent flavour notes are balanced out with lighter, more chocolatey-sour ones as the younger and older rums react to each other. In the Caribbean, rum-loving spirits called Duppies swoop between the island distilleries stealing the best of rum as its aging in old oak barrels. While it isn’t particularly impactful on the nose, the quality of the rum comes through on the palate. There is a woody spice to the flavour, coming from being aged in American oak bourbon barrels, and a hint of cinnamon and nutmeg coming through in the finish.
