About this deal

For any of the Barbie cakes what we need to start with is start at the inside/bottom and work your way out/up! So the underskirt is where we’re starting. In the fold of her skirt, I added dark purple swirls (again with the Princess Shimmers) and in the middle of each flower placed an edible pearl. I also used the silver shimmer again to fill in some more texture to mimic the glitter on her actual skirt. I also added some definition to the fold in her skirt with the purple and outlined the bottom of the dress. BONUS DIY PROJECT – Make Gerbera Daisy Flower Hair clips (I got some alligator clips and hot glued them on and gave them to all the girls at the party, and used the others on the Rapunzel braid we made)

Don’t let the frosting of this cake intimidate you. We made this basic 4-ingredient, 10-minute fondant recipe, colored it bright pink, and draped it over the cake. We used a small decorating tip to pipe some buttercream “pearls” on the dress and kept it very simple. You can add ribbon, icing, sprinkles, or any other edible decorations you like! What Frosting is Best? Get creative with decorations! You can use sprinkles or any shape or size, piping gels, or any other fun sugary ingredients you can find. Prep your piping bags with the colors and tips you are going to use. I have found that big tips are my friend when it comes for frosting a princess Barbie cake. You can get pretty designs without having to pipe lots of individual stars. The Elsa cake (below) was less time consuming than the Rapunzel cake (also below). Put the bottom layer of your cake on the serving platter or cake stand that you will use. Slip some parchment paper a few inches wide (or waxed paper) under the edges of your cake about ¼ in. You’re going to pull these out after you’ve decorated it and it will give you a clean plate and smooth edges. Whip the mascarpone whipped topping next. Into a stand mixer using a whisk attachment, I combined 1 1/2 c cold, heavy cream, 3/4 c powdered sugar, 1 tsp lemon extract, and whipped til stiff. Then I added by spoonfuls, with mixer on med – 8 oz mascarpone cream cheese. Whip til well-blended, but don’t over-whip. Chill.Gradually add the sugar, beating until smooth before adding more. Both of the above were from AllRecipes.com. Thank you!!! Grease and flour your cake pans. You want to use 3 8-inch round cake pans and one ovenproof glass bowl.

I covered the pretty section with some luster dust and then to bring out the detail I painted the lines with a paint brush and clear vanilla! (notice I rolled up her 16 inch long hair and using a twist tie kept it out of her face, and out of the way while I worked on the dress!)I had to overcome a few structural issues in constructing this cake. First of all, I had to secure a long wooden skewer to the doll, under her dress. This would be inserted deep into the cake (about 3″), so I wouldn’t have to worry about the doll tipping over! I secured it with 2 zip ties, TIGHTLY under the dress. Find your “molds”.The “skirt” of the cake is baked in one or two 8″ cake pans and an oven-safe glass bowl (or two glass bowls, one medium-sized and one small sized). That’s all you’ll need for the base of the cake, or the skirt. Get creative with what you have. Just make sure the bowls you are using are oven safe. A ceramic or stoneware mixing bowl will work great. The size of cake will fit any Barbie-size princess doll or Barbie doll. Separate your frosting into bowls, color with food coloring, then cover with a damp cloth until ready to use so the frosting doesn’t dry out. Today I am trying to make a Belle cake BUT my sons friend wants a vanilla cake. I use the Traditional Vanilla Bithday cake recipe from the same book but the cake fell. The middle simply did not bake evenly ;( Her puffy sleeves. I started with 2 fondant balls to make sure they are equal and match. Then I started shaping them! Add the vanilla and add it to our princess! Now we have the base design complete. You could leave it here for a decent cake, but to take it over the top it’s time to start working on the details. That’s what really makes the cake.

I think I might have impressed myself with this one. At least at 2 a.m. when I finished up, I thought it might be my best culinary masterpiece to date. The cake itself, has 5 thin layers of vanilla cake, 3 – 8″ layers, and 1 – 6″ cake sliced in half. For these, I used my favorite Golden Vanilla cake mix from King Arthur Flour. Instead of waiting until that evening to reveal the cake to the Princess, I showed it to her when she woke up the morning of her actual birthday. I figured she could appreciate it longer that way. And that was a well-played move, Mom. Now using a sharp knife trim the bodice into shape! Remember you can do any princess you want, so use the colors and bodice shape of the princess your trying to make.In your big bowl, cream together the butter, sugar and dry strawberry gelatin until light and fluffy chunks. Practice piping on wax paper until you get comfortable creating your designs. Hereis a great post on some simple piping techniques to try. Her skirt is all shiny, so using a brush (not one you EVER use with paint or make up or anything, JUST for food!!! Anyway, use the brush and edible glitter, or luster dust! I brushed it all over the skirt, bodice, etc… It adds that final shine/glow to the dress.
