Incredibly well constructed with a stunning range of flavors means even the most budget-friendly bottles of Hibiki should be savored rather than gulped down. Chief blender of Suntory, Shinji Fukuyo, noted that the team took on the challenge of crafting a new blend with “meticulous precision” to celebrate the milestone. The vast number of whiskies used for each bottle – sometimes more than 30 per blend – reveals a fast-paced adventure for all the senses. It’s something no other whisky brand has achieved, perfected only with years of experience. With its unusual flavors like lychee and fig and full orchestra and aromas blended with a traditional smokiness, Hibiki is everything its name, “harmonious” represents, and more. The whisky offers ‘refined and elegant’ notes of kumquat and jasmine with Japanese incense, with subtly sweet and floral hints combined with spiced sandalwood and agarwood on the palate.

In addition to the Hibiki 21 Year Old, The House of Suntory has unveiled a centennial Hibiki Japanese Harmony bottle design, created to bring the art of monozukuri craftsmanship to life. The bulk of Hibiki comes from the Chita Distillery (知多蒸溜所) in Aichi. Being mostly corn-based and column distilled, this grain portion adds lightness, soft texture, and fruit to the blend. The distillation run through the columns is rapid, which produces a heavier new make. Amber in colour, the whisky presents notes of rose, lychee, a hint of rosemary, mature woodiness, and sandalwood on the nose. Whiskybase B.V. As mentioned earlier, Japanese whisky has gone from boom to bust before. But don’t count on Hibiki 21 being discontinued. Suntory clearly wishes to keep this whisky in its lineup. The limited edition Hibiki 21 Year Old is a marriage of malt and grain whiskies, with rare mizunara oak placed at the forefront, which is said to have ‘profoundly influenced the blend’ while still maintaining Hibiki’s character and essence.
