Our version doesn't use corn syrup, which means it can be made with ingredients readily available worldwide, especially in places where corn syrup may not be easily found. Who invented Marshmallow fluff? Put a layer of the sponge fingers in the base of a large trifle bowl – you don’t have to be too precise – then scatter some of the fruit on top. Pour the jelly mix over the top, leave to cool to room temperature, then put in the fridge to set for at least four hours. During this time, the sponge fingers will soak up quite a bit of the liquid, but don’t be alarmed. Pour the mixture into the prepared tin and spread it evenly into the corners with a palette knife. Bake the sponge on the middle shelf for 10-12 minutes, until it is well risen, firm to the touch, and starts to shrink away from the sides of the tin. Remove from the oven and reduce the temperature to 120°C/100°C fan/250°F/Gas ¾. Make the topping. Reheat the oven to 180°C/160°C fan/350°F/Gas 4. Place the apple slices in the warm lemon syrup and turn to coat. Working from the outside edge of the pastry case, dab each apple slice on kitchen paper to remove any excess syrup and arrange the slices in concentric overlapping circles. When you reach the middle, slice a few of the apple slices in half so they are wafer thin and shape them into an open rose to fill the hole in the centre of the tart. Brush all the apple slices with the melted butter and bake for 30 minutes.
