We tasted or smelled different Goa spices in the form of berries, leaves or even bark, and while, in the main, their tastes were very familiar to us, trying to pin down exactly what they were proved impossible. Essential Goan Ingredients Coconut. Coconut milk, pulp and any other way of using coconut flesh, is an essential part of Goan Cuisine.

Apart from its use in vindaloo, garlic is also used in many other Goan dishes, such as curries, stews, and rice dishes. It is often paired with ginger, which helps to balance out the pungent flavour of the garlic and adds a warm, spicy note to the dish.Cinnamon is an essential spice in Goan cuisine, and it is used to add a unique flavour and aroma to dishes. You can use pastes or purees for the ginger and garlic if that's easier for you.

My inspiration for this recipe is from Chrisan’s blog, Chrizz Grub Scene, and her recipe for Goan rice pulao. I hope you will give my recipe a try, regardless of how you like to cook your rice, and tell me how you like it. Oil: Little amount of oil is needed preferably coconut oil to give a tadka of burnt onion to the curry. If coconut oil is not available, then use any other cooking oil.
