Last stop on round would be old ma Peggotty’s place —’twas like taking bread to the top of the world!Not the best lemon curd I have ever tasted, but it's undeniable that I would eat ANY lemon cured most days as it's one good that I wish the rest of Europe would embrace, thus this didn't taste as bad as it could have done. I didn't experience the grainy or lardy taste that other reviewers mentioned, but I would definitely join them in recommending Wilkin & Sons lemon Curd if you are able to shell out a bit more for it. If you aren't able though, you won't be disappointed with this one. To make the lemon curd, first add the soy milk, sugar, and cornstarch to a saucepan. Whisk the mixture extremely well, until there are no visible lumps of cornstarch. Add in the lemon juice and lemon zest and whisk well again to combine. Possibly dating from 1969 when there was a different wrapper each day saying “Happy Monday”, “Happy Friday”, “Happy Weekend” etc. Monday’s bread was blue; Tuesday orange; Wednesday purple; Thursday green; Friday red, and Saturday yellow. Tip it on to a lightly floured work surface then knead it very briefly so it stops crumbling and comes together in a nice ball. As soon as it comes together, stop working it as you don’t want to over mix it.The sugar is really important in this recipe, so I don't recommend reducing or swapping it. You can use granulated or superfine sugar (caster sugar). Sugar provides the curd with structure as well as balances out the acidity of all that fresh lemon juice! Add the egg to your mixing bowl then mix it all in until it starts to come together. If you need to, use your hands to bring it all together. Very disappointing. Perhaps if you haven't had lemon curd before, or are stirring it into a dessert, it would be OK. For spreading on toast, it's not. I love lemon curd, but this was a poor imitation, and when you look at the list of ingredients, you understand why. Glucose syrup, palm oil, maize starch... Do yourself a favour and spend a bit extra for Waitrose or Wilkin Sons. Far tastier, smoother, lemony and delicious. Good lemon curd is a real treat and is worth the extra. Normally I hide my jar of lemon curd from my kids, but this time I gave it to them and they didn't finish it. Got two pots of these and they are all gone. Too many ways to use them. I find it a little overly sweet but it is nicely tangy and the texture is really pleasant. Keep refrigerated once pot is open. I like it on toast, in yogurt, on ice cream, I also use it to fill homemade doughnuts and pastries. I even brush it on salmon before baking it into the oven for a sweet and savoury glaze: 2 heaped TBSP of curd, 1 TBSP of oil stir then brush on salmon before wrapping in greaseproof paper and baking in a hot oven.

Use a round cutter (about 10cm) and cut out 12 bases for your tarts. Lay them in your muffin tins then, using a spare piece of pastry, press the circles down so they fill the holes. Absolutely adore the taste of lemon curd!! ok its not the same as my old nan used to take hours making but it is a product that i like very much not overly sweet and has that distinct acidic lemon taste that goes very well on fresh crusty bread and butter but also with my two favourites with a freshly toasted crumpet or a delicious homemade scone I bought this so as to have an alternative to jam or marmalade and it tasted great in a sandwich, on toast, homemade scones or as a tart filling. It tasted nice and lemony and wasn't too sweet. It kept well in the fridge and I had to work really hard not to eat it all at once. It's good value for money and has a nice smooth texture.
