Twenty four different kinds of foods including cereal grains, cereal grain powders, peas, beans and whole spices of foods were treated with 0.5 to 50ppm ozone (gas phase) at 10°C for 1h. Riboflavin was stable during treatment, with over 90% retention of vitamin B 2 in all food samples, even with treatments of 50ppm ozone. Thiamin decomposition was detected in some food samples of flours and spices treated with 50ppm ozone. Losses amounted to up to 40% in products with high surface areas, but minimal losses (∼10%) were seen in whole grain and bean products (Rice 2012). Extensive use of ozone (110–120ppm) will chemically destroy a variety of amino acids (Rice and Gomez-Taylor 1986), but there is no evidence that the use of ozone at levels suggested for food preservation will cause any destruction of amino acid (Rice 2012). As a sugarless sweetener, date syrup is a popular natural and healthy sweetener, which can be used instead of artificial sweeteners, such as sugar.In Lebanon and Syria they would douse them with Sugar Water or Honey. In Turkey and Greece they use Grape Molasses, In Iraq and the Gulf they douse them in Date Molasses.....and so on. However, one tablespoon of date syrup is usually OK to consume.
