Lamington Icecream Cake A deliciously layered Lamington Ice-Cream Cake inspired by everyone's favourite treat! Strawberry ice-cream, chocolate lamington fingers, vanilla ice-cream and raspberry topping make this no-bake dessert a total winner! Meanwhile, make the chocolate coating. Melt the chocolate and coconut oil together in a heatproof bowl set over a pan of gently simmering water, stirring until smooth. Remove from the heat and leave to cool for 5 minutes. With all that is going at the moment, I'm doing my best to look on the bright side and here on the blog it's going to be business as usual as much as possible. I've been busy planning, testing and photographing lots of new recipes that you can make with the kids at home, and today I'm starting our Easter celebrations with these cute marshmallow bunnies! To make icing, beat butter and icing sugar together in a large bowl with a handheld electric whisk until light and fluffy. Melt marshmallows in microwave in a glass bowl for 20sec bursts until just melted and warm. Stir marshmallow until smooth, then beat into icing with a drop of food colouring, if using. One tip I have is that I freeze my marshmallows – I pop them in the freezer a day or two before I need them. You can of course not freeze them at all and it potentially has no effect on the outcome but my hope is that the marshmallows hold their shape longer. How about you make two batches and test it out!

And my favorite plus of this recipe is that you can cook it for future use and even freeze it until the right moment. Ingredients for Coconut Snowballs Place until the grill for 3-4 minutes, watching carefully as once the tops of the marshmallows start to melt and become caramelised they can easily go too far and burn. These cute marshmallow bunnies are surprisingly easy to make and perfect for a cute Easter treat for the kids - big and small! For individual s’mores, you will need: 2 digestive biscuits, 3 marshmallows and 7-10g (.25oz) chocolate. Oven baked s’mores: homemade s’mores can be cooked in the oven instead of under the grill. Preheat your oven to 180˚C / 350˚F. Place half the biscuits on the lined tray then top with three marshmallows and a third of the chopped chocolate. Place in preheated oven and bake for 4-5 minutes until the marshmallows are turning gooey. Take out of the oven top with another biscuit and eat straight away!

Drain the gelatine, squeezing out any excess water with your hands, then roughly chop into small pieces. Add the pieces, a few at a time, to the meringue, whisking continuously between each addition, until all the gelatine has been incorporated and the marshmallow is stiff. Heat oven to 190C/fan 170C/gas 5. Beat butter, sugar, egg and vanilla together with a pinch of salt until smooth. Fold in the flour and coconut to form a dough. Press into your prepared tin. Use a spoon to press it down and get it nice and smooth. This helps to stop it crumbling when cutting. Step 4 - Bake Easter is going to be a bit different for everyone this year, but we're going to be focusing on fun food, crafts and games with the kids to make it as fun as possible in the circumstances. Repeat with the remaining pink marshmallows, then do the same with the white marshmallows, reversing the colours so that they have white ears and pink tails. Carefully spread the chocolate mixture over the marshmallows and place in the fridge to cool completely before slicing. Step 10 - Cut Slice Be sure to cover them with plastic wrap or store them in a container with a lid to keep them from drying out. Everyone loves a sweet treat now and then, but keeping them low in syns is important on the Slimming World plan if you want to keep within your syn allowance. These grilled s’mores are best enjoyed straight away. I do not recommend keeping them for longer than a few hours. Variations
