About this deal

By adding a finishing stage in casks made from one of Japan’s national flowers, Suntory brings the representation of the Sakura trees to whisky. Beautiful and layered on the nose, it invites you in to it’s bouquet, giving you a different experience but one that is welcome. The finish stays with you, leaving you wanting even more with each sip. The wood adds a beautiful elegance to the product, yet also reminds us of the beauty of what nature offers, and the many hours that the craftsmen poured into making such an excellent product. As with Company Distilling's first bourbon, this whiskey is a wheater (with liquid sourced from unnamed distilleries from three undisclosed states) that features a maple wood finish. Unlike the original release, this one is bottled at cask strength. At this point, a new release of The Vaults is cause for excitement, as every previous release has proven delicious—last year's edition scored 93 points, while the 2020 whiskey scored a 94. While it will be available nationwide through the holiday season, it is on allocation, so keep your eyes peeled in-store and online if you're hoping to secure a bottle. Since 1923, Suntory has been renowned as the pioneer of Japanese Whisky for its House of Master Blenders and for their Art of Blending. Founder Shinjiro Torii built Japan's first malt whisky distillery in Yamazaki, and the Suntory legacy continued with Torii's son and Suntory's second Master Blender, Keizo Saji, who continued to establish distilleries including the Hakushu distillery. As the generations of Suntory's master blenders carry on, Suntory Whisky remains committed to heritage and innovation. The House of Suntory has been named four-time Distiller of the Year at the International Spirits Challenge in London, UK (2010, 2012, 2013, 2014). Suntory Whiskies are subtle, refined and complex. The portfolio includes two single malt whiskies: Yamazaki—Japan's number one single malt, multi-layered and profound, and Hakushu—verdant, fresh, and delicately smoky; and two blends: the noble blend, Hibiki—Japan's most highly awarded blended whisky and Suntory Whisky Toki. The House of Suntory portfolio also offers Roku Japanese Gin and Haku Japanese Vodka. Created from Japanese ingredients by the master artisans at the House of Suntory, Roku Gin and Haku Vodka represent the nature and spirit of Japan. I have been mesmerized by the Sakura cask for the last five years now due to its symbolism, but also because of its distinctive, subtly floral and spicy aroma and flavor notes," says Fukuyo. "There have been many experiments with malt and grain whisky components, and we found that there was a special alchemy between the grain whiskies and the Sakura cask. It is this special relationship – harmony – that inspired me to create this blend."

Hibiki means “Resonance” in Japanese. From its launch in 1989 to commemorate the 60th Anniversary of Suntory, Hibiki embodies the Suntory philosophy to live in harmony with nature and people. As the Founding House of Japanese Whisky and A House of Master Blenders, the House of Suntory has gone to great lengths to explore the breadth and depth of what Harmony can mean for a blend. Every Hibiki expression is one of the most sought after blends in the world where every Hibiki expression is meticulously crafted for us to discover a different kind of Harmony. Achieving the right balance and orchestration proved to be a great challenge from the start since the Sakura cask is one with strong character that can easily become overbearing.Royal Mile Whiskies: This is another good retailer we know to be reliable. Occasionally, they’ll get a bottle of this series in.

The House of Suntory said Hibiki Blossom Harmony 2022 captures this “joyful spirit” in finishing a “rare selection of whiskies” in sakura. A sense of playfulness was likely needed when making this blend, as cherry woods and whisky are notoriously challenging to work with. This particular blend has the added intrigue of incorporating whisky finished in sakura casks. Sakura wood – or Japanese cherry – attracted chief blender Shinji Fukoyo due to “its symbolism, but also because of its distinctive, subtly floral and spicy aroma and flavour notes”.Japanese whisky producer House of Suntory will release a limited-edition bottling of Hibiki Harmony Japanese whisky that was finished in sakura wood casks, according to The Spirits Business.

While Scotland has strict laws dictating the type of oak used in their whisky, Japan’s rules are much looser. This has encouraged distillers to play native wood like mizunara and sakura. Under its Chita brand, Suntory has a grain whiskey matured in sakura casks for three years. Kurayoshi Distillery, Mars Shinshu, and Nagahama Distillery also have similarly-styled whiskies.
