He hit a huge gong to get proceedings under way at the glittering launch party on Wednesday(February 1). Now part of the Iconic Luxury Hotel collection, the hotel has geared up its dining operations, making an enormous publicity splash by partnering with Chef James Martin. After striking the gong, James Martin delivered a speech to the throng of guests from the hotel's mezzanine, detailing the time he had spent over previous months, largely incognito, getting the restaurant and his kitchen brigade ready for launch. He said: "The hard work starts tomorrow when we have paying guests in."

Afternoon Tea

As an anybody who knows the history of The Lygon Arms, it's always had form for attracting the great and the good - from royalty to acting royalty, such as Elizabeth Taylor and Richard Burton. GRILL, which is open now, will be the hotel's main restaurant, serving Martin's signature dishes like: Thai-spiced Cornish crab risotto; burnt aubergine, vegan ricotta, harissa, bulgur Wheat and soft herbs; and Laverstoke Buffaloumi with confit Roscoff onion, chilli jam and treviso. Thanks for welcoming me to the Cotswolds club," said Martin, but added that his style of cooking would be different to the Blunos' that got the Lygon in the Michelin Guide. "I am a farmer's lad so I am into super simple cooking, presented finely."
