Any strawberries that started to soften or turn a burgundy/brown-ish color should not be used to make the liqueur. Completely pat dry each berry to help the sugar coating last longer. The alcohol infused strawberries are now full of Prosecco, so removing excess liquid will not lessen the boozy effects. If you like you can add some fresh or frozen strawberries to the drink.
