About this deal

Yes, you can freeze the actuals snowball cakes before you get to the jam filling and icing stage. Just wrap them well in cling film and a freezer bag and they will keep for up to 3 months. Prepare some items ahead of time. At the end of the year, things get real hectic… real fast. So do your future self a favor and begin soon. Review how to freeze cookie doughand you’ll be thankful you had a head start! I have made these with regular sized marshmallows and with mini-marshmallows and I have to say, the regular marshmallows work much better here. The mini-marshmallows made for a smaller, cuter, truffle-sized snowball but there wasn’t enough marshmallow for me.

On the inside is a sponge-cake type filling. Which goes perfectly with the chocolate and coconut it’s dipped into! Add the boiled mixture to the dry ingredients until well combined and chill well in the fridge, until mixture is able to be shaped into 1 1/2 inch balls. The mixture will be quite soft and sloppy while it is still hot. It will not firm up until it is very well chilled. So what are these snowball cakes? Well, Scottish snowballs are almost like a cross between shortbread and a scone. They aren’t out and out cake-like in texture.

Granny spent a lot of time experimenting to get the perfect egg ratio for Snowballs. In the end, she found one whole egg and one extra egg yolk to be just right. Don’t just bin that excess egg white though – save it make some homemade meringues. Mix all the ingredients together then put in the fridge, until ready to roll. This is the stage after all the ingredients are mixed together then put in the fridge to set. My mum made and cooked everything from scratch. She still does. Now you see where I get my enthusiasm for cooking from? Nana Ling has attributed this recipe to “Nan”– I wonder if it’s from her Nan, who would be my 3 x great grandmother? Snowballs ingredients

You’ll also need mini cupcake tins. The original recipe calls for gem irons, and while these are still available at specialty stores today, I’m guessing you might not have them. So I’ve cooked these up in mini cupcake tins. It’s a simple water icing that is used to coat your snowballs in preparation for their coconut finish. And because we are making an icing, icing sugar (also known as confectioners sugar or powdered sugar) is a must. Mum's no-bake chocolate snowballs are delicious easy to make chocolate balls made from just 6 ingredients. This is a fantastic holiday recipe kids will love! Makes about 4 dozen. These should ALWAYS be stored in the fridge to maintain the soft yet slightly chewy texture. They tend to be too soft at room temperature. This is a fun recipe to make with your kids because they can make little snowman from the cookie dough.

I love this stage because this next step is to roll them in coconut and then freeze them until you are ready to eat them. Mmmm The rolling of the mixture stage, into coconut. Snowballs rolled in coconut.Spread your jam once your snowballs are cool enough to touch but still warm. Like our Empire Biscuits, by adding the jam while the buns are warm, it acts like a glue as they cool; adding the jam when the buns have already cooled will mean they continue to slip around – not what you want when it comes to the icing and coconut!

Line two baking sheets with parchment paper or silicone baking mats. And make sure there is enough room in your refrigerator for the baking sheets. This recipe I have been making for years and they make a delightful Christmas gifts for your family or friends if you are looking for a gift ideas. This is the boiled mixture, sugar white or brown, evaporate milk, butter and vanilla, boil then add all the dry ingredients. Dry ingredients oats, coconut and cocoa mixed together then added to the wet ingredients. The liquid mixture poured in with the dry ingredients.

SNOWBALLS THAT MELT IN YOUR MOUTH!

Leave them to set completely for about half an hour before eating or you’ll get covered in coconut and icing How long do Scottish snowballs keep?
