About this deal

Wet the rim of the pie dish, and carefully arrange the ribbons of pastry all the way round, pressing gently into place. Wet the top of the pastry ribbons, and carefully lay the pastry top over the filling and ribbons. Trim off any overhanging pastry at the edges with a knife, and use a fork to press the pastry gently onto the wetted edge to form a seal. Make a couple of small holes in the pastry top with a knife to let out steam. Brush with a little water, and sprinkle over the caster sugar. Fill each case with 2 teaspoons of mincemeat, lightly moisten undersides of pastry lids with water and use to top tarts, pressing gently at edges to seal. Preheat the oven to 200°C (180°C fan oven) Gas Mark 6. Place a baking sheet in the oven to heat up.

When lining the tin with the pastry, take care not to stretch it or it will shrink around the edges when baked. Add the salt to the flour. Either rub the cold butter into the flour with your finger tips in a bowl, or pulse flour and butter in the food processor, until it resembles fine breadcrumbs. Add 2 tbspn cold water and, with a table knife in the bowl, or using the food processor, mix in until it forms a ball. Add the other tbsp if it is not coming together. Tip out onto a flour surface and knead very gently until smooth. Do not over work. Wrap in cling film and put in the fridge for 10 minutes. Grease the tart tray with butter. Just butter dabbed on some kitchen roll or butter wrapper works well to grease tins with. Line the pastry case with a sheet of crumpled baking paper and fill with ceramic baking beans. Place on the hot baking sheet and bake for 15 minutes. Remove the lining paper and beans and bake for a further 5-10 minutes until the pastry is pale golden. Reduce the oven temperature to 190°C (170°C fan oven) Gas Mark 5. Put little pastry stars or other shapes on top of the jam tarts as a decoration, you could also sprinkle with icing sugar whilst they’re still hot from the oven.

Tip peeled, cored and chopped apples with the lemon juice and zest into the pie dish. Dust over the sugar and spice, and add the raisins or sultanas, turning the filling to coat the apple pieces thoroughly with the other ingredients.

Spread the bacon pieces evenly in the pastry case. Gently pour over the egg mixture. Bake for 20-25 minutes until the filling is just set and golden. Serve warm or cold.
