McVitie's Digestives Caramel Millionaire Slices are baked to perfection with a bottom layer made with digestive biscuits, followed by a sweet layer of caramel and topped with silky smooth milk chocolate. You also want to use a flat bottomed spatula, like these ones. Using a spatula with a sharp corner means you can really scrape the caramel, and prevent it from catching in the corners! Caramel problems For the shortbread, it really is quite basic – you can do it by hand, or in a food processor, or in a stand mixer, or with an electric hand mixer. You just want to mix the sugar and butter together until creamy, and then add the flour and combined until a dough is formed. Step 6: Pour the caramel onto the biscuit base and smooth it out. Pop into the freezer or fridge just while you melt the chocolate for the top. Golden syrup: This is actually an optional ingredient, since it can be difficult to find in some places. Just a couple of tablespoons does give the caramel an extra depth of flavour (that’s hard to describe!), but you can easily replace it with another kind of syrup (corn, maple, honey, date). Or just skip it altogether!I use Maldon Sea Salt as it tastes delicious and I like my caramel salty so I use the 3 pinches - I really really recommend using Sea Salt over ground fine salt as the taste is better and it's easier to use compared to the fine salt where you could easily add in far too much.

If you don't want to use the spread, you can use 300g of chocolate on the top, and plenty more biscuits! Put the butter and sugar into a saucepan over a gentle heat, stirring regularly until the sugar has dissolved. Normally I try to show a bit of self respect with up close “bite shots” and use a fork…. But I’m not going to lie to you – in this case I just took a big fat bite out of this Caramel Slice!!! I’ve only ever known it as a Caramel Slice, but I was quite interested to learn that overseas, it’salso known asMillionaire’s Shortbread (appropriate!), Caramel Shortbread, Chocolate Caramel Bars.

The timing is something I can’t really narrow down on. It takes between 5-7 minutes to boil. This can vary depending on the type of stove you use, the brand of ingredients, the pan you use, and so on. I don’t boil the caramel to temperature, and I never have. Watch my youtube video to see the caramel go from the beginning to the end! Leave to set It’s a no bake slice! Instead of a homemade shortbread base that you have to bake, you use a crushed biscuit base instead. You don’t have to bake the caramel either.
