The batter for this apple cake is stiff to support all the apple. You will have very thin layers of cake mixture. Make sure the bottom layer covers the tin but with the top layer you will probably be able to see the apple in places. Do not worry! That's how it's supposed to be. How long does Apple Sponge Cake keep? Once you’ve made the apple traybake batter then there’s just the easy job of pouring it into your baking tin and popping it in the oven to bake. Using the k-paddle of your free-standing mixer or a hand held mixer (or even wooden spoons) beat the butter and sugar together for a few minutes until they are light and fluffy. If you’re using butter it needs to be soft enough to mix in so if it’s still hard from the fridge cut it into a few pieces and pop it in the microwave for a few seconds (long enough for it to soften but not melt). I told you this was the easiest cake recipe ever. All you have to do is sift the flour into a mixing bowl and then add the sugar, egg, oil and milk. Whisk until there are no lumps, and that's it. I think this cake is simply perfect lightly dusted with icing sugar but if you're after more elaborate dessert try serving it gently warmed with a splash of cream or scoop of good vanilla ice cream! This easy apple traybake is very similar to a Dorset apple cake but uses sweet dessert apples instead of Bramleys. It's got cinnamon, brown sugar and sweet juicy apples baked to golden perfection. If you use eating apples you will probably need less sugar, depending on how sweet your apples are. The texture of the apples in the cake will be slightly different, again depending on the variety of apple. Flour Butter: it’s up to you whether to use real butter or baking margarine. Both will work equally well. Butter will give a richer flavour, whereas margarine tends to give a lighter, fluffier cake. Hand on heart, I’m a bit of a fan of using Stork baking margarine in my cakes. Whichever one you decide upon, ensure it is brought to room temperature as it will be easier to work with. I use whatever apples I have at home. But I find this traybake works best with tart apple varieties, like Granny Smith or Braeburn. However, avoid cooking apples as they go to complete mush. Core your apples. Peel them if their skins are tough, but I rarely do that. Skins soften whilst baking and I hardly notice they are there. Slice your apples very thinly. After that, squeeze some lemon juice over them to prevent them from browning. We find the easiest way of lining a baking tin is to cut a strip of baking/parchment paper that fits in the tin widthways, and then do the same the other way. Leave some of the baking paper hanging over the edges to make the traybake easier to remove once it’s baked. Beat the butter and sugar together I still prefer the taste of butter in buttercream icing so I wouldn’t swap the butter for baking spread in that but it’s great for the traybake itself. How long does an apple traybake keep? I recommend using fruit that has a colourful skin, since it will add extra interest to the final presentation of this cake.
