I can turn [my gas burner] down to simmer when I want to, conserving fuel…” The difference between a boil and a simmer is just a few degrees, but they definitely make a difference! The key to remember here is that the bubbles of a rolling boil move the food around a lot, while a simmer doesn’t involve that level of movement. Rapid Simmer: Medium- to medium-high heat, with more bubbling in the pot, but the bubbles should still be fairly small. Most often used for reducing sauces. Roy “TrailDad” Robinson created and popularized the Cat Food Can Stove, one of the original DIY homemade alcohol stoves. Roy was the father of Flyin’ Brian Robinson, who used this stove on his groundbreaking Calendar Triple Crown in 2001 and who still uses one today. The windscreen can be rolled around your fuel bottle when not in use. I keep the bottle and windscreen rolled inside my sleeping pad while on the trail. Final product Punch two rows of holes around the bottom edge of the windscreen. A paper punch works well. I use a 1/4-inch canvas grommet punch. Bend the foil into a cylinder and hold the ends together with paper clips. (Carry a couple extra paper clips. If you drop one in camp, it’s hard to find.) Next, we slid the simmer ring up so the air holes were completely open. Again, 2 tbsp of fuel and a pint of cold tap water in the pot. Light it off, and the water comes to a full, rolling boil in under four minutes. (Under ideal conditions: 70-degree evening, no wind.)

In 1983 the old clip-on simmer ring was replaced by a new, adjustable simmer ring. Very soon an extruding ”handle” was added to the adjustable lid to make opening and closing easier. This is the same model used today. Using a small church key-type can opener, cut six tabs from the inside out around the sides of the smaller can. In 1963 the upper, conical part of the burner was slightly changed to accommodate a yellow, plastic cap. An expandable brass cap was available as an accessory. In 1971 these two were replaced by a screw-on cap and clip-on simmer ring. And in 1976 the company adopted a new ”T” logo underneath the burner. It is still in use today. This is an ALCOHOL stove. DON’T USE WHITE GAS, COLEMAN FUEL OR ANY OTHER GASOLINE FUELS IN THIS STOVE!The screen must come up around the sides of the pot. If your pot handle won’t allow that, cut a notch out of the screen for the handle. Use pure alcohol, either alcohol stove fuel, shellac thinner, or fuel line antifreeze (not radiator antifreeze!). Read the label to be sure it is 100 percent denatured alcohol. Rubbing alcohol contains up to 30 percent or more water, and it doesn’t burn well. Like the original tuna can alcohol stove, it will bring two cups of water to a boil in about 5 minutes, has no moving parts and will fit inside your cook pot. Unlike the original, the new cat food can stove weighs just 1.6 ounces including the stand and windscreen.

Covering a pot for a few moments allows you to get the pot up to temperature without adding more flame from below. Of course, there’s some overlap with temperatures; in other words, a rapid simmer could be considered a slow boil. A slow simmer could be considered a proper poaching temperature. Although it’s science, it doesn’t have to be exact, but it pays to get as close as you can within a couple of degrees. Meat and poultry: Simmering is used to cook meat and poultry often in the form of poaching or braising, in the oven or on the stove.Vegetables: Fibrous, starchy root vegetables like beets, potatoes, sweet potatoes, rutabagas, and turnips are best simmered so they cook evenly throughout. Large cuts of meat: Meats that are simmered stay moist and fork-tender, like corned beef, while boiled meats are often dry and tough because the heat of boiling liquid can cause their proteins to toughen. This little set has a lot going for it. Namely, it comes with two pots: one large, with a handy volume indicator, that holds almost a full liter of water (it’s 985 milliliters or about 33.3 ounces), as well as a smaller, 470 milliliters one that doubles as a lid. It also has a brass alcohol stove, a stand, a base for solid fuel should you choose to use it, and a mesh carry bag. The cook pots feature a durable-but-light anodized aluminum, and the alcohol stove, in line with the best ones, has a fold-away handle that allows for a range of temperature control, and its screw-on top seals tightly enough to hold leftover alcohol after the cooking is wrapped up. All in all, it weighs about 15 ounces. At just under a pound, it’s not the lightest means to cook with, but for those who don’t want to go totally bare-bones, this is an excellent introduction to alcohol-stove cooking. Although it’s made for alcohol, keep in mind that you can also use methanol.
