max. I use a WDT, a leveller, and a sprung tamper so that everything is always the same. Up till now, it has been just that, and I can The Barista Express Impress, which I'll talk about below in the comparisons section, isn't quite the same, by the way. Yes, it's an integrated grinder machine, BUT, it's assisted. If you were looking for a machine to take away some of the skill requirements, this is what the Express Impress is about, but I'll get to that a bit later in this post. If there was a version of the Pro without the integrated grinder, with the LCD screen, shot timer, and everything else that the Pro has going for it, and if it was priced right allowing the owner to be able to afford a capable espresso grinder at a similar price to the pro, I think it would be one of the best entry-level machines. Overall, I was both very impressed and very unimpressed at the same time, by the La Specialista Arte'.

The Barista Express in my humble opinion is the best integrated grinder espresso machine for anyone using mainstream coffee beans and dual-walled baskets, looking for the best balance of cup quality, build quality, and value for money. This is very evident in the fact that most of these brands shout from the rooftops about “15 bars of pressure” as if it's a selling point, clearly missing the point that this is purely the normal max pressure of vibration pumps and that you really wouldn't want a full 15 bars of pressure being delivered into the basket. The Barista Max + comes with standard single walled baskets, and is a better alternative to the Barista Pro.This is simply the max pressure of most vibration pumps, and more isn't better, especially not with traditional baskets. The Barista Express has a pressure gauge, but the Pro doesn't, and I suspect the main reason it doesn't is that there isn't room due to the LCD display. It's simple to use (as long as you're using the dual walled baskets), the build quality is very good, it has a good sized water tank with water filter, a lovely sized drip tray with an internal storage compartment, and it has a proper steam wand and a hot water spout for Americano. Except for the Sage Dual Boiler, and the Oracle & Oracle Touch (which are based on the Dual Boiler) all of Sage's espresso machines feature on-demand water heaters instead of boilers. Let me explain: dual-wall baskets (also known as pressurised baskets) are great for getting the most flavour out of ground coffee that is weeks and months, rather than minutes, old. The second wall of metal, hence the name, increases pressure inside the basket and makes it possible to eke flavour and crema from coffee that’s past its best. Single-wall baskets, however, rely entirely on the freshness of the coffee, the correct grind and just the right amount of tamping to create the perfect amount of pressure inside the basket. They can give vastly better results with good, fresh coffee, but you’ll need to be ruthlessly consistent if you want to get the best results time after time. LOW PRESSURE PRE INFUSION: Low pressure pre infusion gradually increases pressure at the start and helps ensure all the flavours are drawn out evenly during the extraction for a balanced tasting cup. What I’d do, though, is dissolve a small amount of Puly Caff (it’s about 9 quid for a whopping great 900g tub) in a bowl of hot water, put your baskets and wand tip in that, and the portafilter but try to stand it up so the plastic handle isn’t in the water. But just before you put the baskets etc., in the bowl, dip a cloth in it and give the machine a good wipe with this puly caff solution (other espresso machine cleaners are available, you can get liquids too which are a bit easier as they don’t need dissolving, you just pour a bit in the bowl) leave it for minute or so, and then wipe it off with another cloth just with hot clean water, and then dry it off. If this doesn’t have it looking like new, just do it again and leave it for a bit longer before wiping it off. Re leaving the stuff in the bowl, you can leave it for as long as you like really depending on how dirty it is, overnight won’t do any harm but an hour or so is probably plenty. Just give everything a rinse after. Having said that, they're probably the best cheaper alternatives to the Barista Express that I've tried. With that done, you only need to tamp down the coffee and reach for the Razor tool. Place this into the portafilter, give it a twist while holding the filter at an angle, and it’ll leave exactly the right amount of coffee for a perfect extraction. It’s more effort than a regular bean-to-cup machine, sure, but there’s zero guesswork involved.

It's not a huge deal, the same is true of the Gaggia Classic Pro, but you can very easily mod that machine to change the limit to 9 bars. It’s been too long, I’m sorry. But now I’m really unhappy about this. Please share if you have suggestions about what I did wrong.
