Even the spicy notes have a sweetness to them, with ginger the most obvious among them, and it has a long finish, helped by a slightly oily, viscous feel in the mouth. Cotswolds recently expanded, making it one of the largest whisky distilleries in England, with a 2-ton mash tun, a 10,000-liter wash still, and 7,500-liter spirit still, increasing production capacity from 125,000 lpa up to a potential 750,000. Apart from technical considerations there are also environmental differences that are likely to affect the whisky production – the warmer climate of England’s Southern counties will cause whisky to age in a different way to those in the colder regions of Scotland. On 6 November 2023 the Cooper King Distillery released a whisky distilled using only net zero energy. While best known for distilling gin, England also has a history of whisky making that dates back to the 1800s.
