About this deal

Perfectly sized so you could also get a chocolate malt and not feel like a total glutton (well, almost). The steak weight press is ideal for use at home, when cooking for banquets, in restaurants and food trucks, and much more. I like In-and-Out best for this type of burger, then Five Guys, then Shake Shack as an “I’d eat it if I were starving to death” option. The easiest way to smash the patties is to take a 1-2 quart pot and wrap the base in foil (I use a sheet large enough to tuck into the pot so it holds tightly).

i ended up rolling the meat thin with a rolling pin between two sheets of plastic, scoring it to make squares and then folding them gently over the cheese in the middle. I’ve had too many burgers in my cast iron skillet come out completely raw in the middle (not rare–like still cold and uncooked completely) in the past, so I do them very thin now. of course now there’s one about a 10 minute drive from my parent’s house in nj and i haven’t had it there either. i usually make two “regular” size patties first and set them aside (i throw them on a plate in the fridge for lunches) and then make four little slider patties for us to share at dinner.I just needed a tool that would smash burger patties down to the right thickness for my cooking needs. I have spent years mourning this missed opportunity to not only eat a weekly Shackburger but to have made better use of my last weeks of kid-free leisurely lunches for years to come. The second time I made it, it was much thinner and closer to tasting like the original Shack burger. We moved away from the city in November and I miss Shake Shack so much that it’s (almost but not really) embarrassing. I followed someone’s advice to sear one side of the chilled puck (I did so for about a minute) so it was easier to smash once you flipped it.

I dry it on the flame for a min or 2, then using a silicone pastry brush (or kitchen paper etc) I carefully coat it with a small amount of coconut oil and heat till is almost smoking.Another advantage of purchasing a burger flattener is that it does not require any specialized training before starting and operating it. I don’t eat beef, but have been craving meat this pregnancy… Do you think it work with ground turkey? They slso allow you to cook your burger patty and prepare a juicy, steamy burger all on your own and very quickly.

This heavyweight cast iron press smashes down burgers into flat patties that cook evenly and sear to caramelised perfection. Sainless Steel Burger Smasher: Rust-proof and stain resistant, high quality stainless steel burger press, with round shape fits most pans and skillets. As the posters above pointed out, all that the article is telling us to do is to form the patties on the griddle itself.I like going down to the Pickle Guys on Essex Street, but I realize that’s not an option for everyone. With this simple recipe, you can make your own special sauce topping that will take your burger to the next leve. We added bacon and hot peppers to be like the smoke shack burger :) For anyone that doesn’t have a meat pounder, I used the bottom of a small saucepan to smash the patty and it worked really well. I don’t usually start with meat that’s super cold, though, either, and I can imagine how that would help. Many home cooks were taught never to press down on a burger as it cooks since that would ruin your all-beef patty by getting it to release the juices it needs to stay tender and moist.
