This one’s a given. The basis of any coffee, even a magic one, is espresso. However, the espresso in a magic coffee is special – it’s referred to as “ristretto”. Ristretto is a short shot (less water) of espresso that’s been “restricted”. Due to less extraction from the coffee grinds, ristretto is a shot that’s smaller, more concentrated, and slightly sweeter compared to standard espresso. You’ll need two ristretto shots in your magic coffee. 2. They put their own spin on quite a few coffee and espresso drinks — including their inclusion of cocoa powder in cappuccinos. Magic coffee is a coffee beverage consisting of a double ristretto (30 ml) and 130 ml of silky milk. If you don’t know what ristretto and silky milk are, don’t worry, I’ll explain them in a minute. You may see silky milk referred to as steamed milk, but the use of the term silky milk is more descriptive as steamed milk can also mean milk that has been steamed to have a larger layer of foam. You can make silky milk with any good frothing milk. Other Australian Coffee Drinks Even in Melbourne coffee houses, you may never see magic coffee displayed prominently on a cafe menu. To this day, it’s still mostly just a secret menu item. But if you go into a Melbourne cafe and ask for a magic, they’ll know exactly what you mean. What is Ristretto? If you are interested in buying any of the magic coffee tables, here are some tips and ideas that might help you: Ristretto” is an Italian word that can loosely be translated to “restricted” or “narrowed”. It’s a short shot (i.e. half as much water) of higher concentrated espresso coffee, meaning the barista pulls only the first portion of a full-length espresso shot. It’s made with the same amount of coffee grinds as espresso, but the yield is stronger and slightly sweeter than espresso because the grinds aren’t extracted for as long. Typically a fine grind size is used to maximise flavour and strength. Comparison ChartThe use of ristretto in place of espresso is a trademark of Australian coffee. You’ll find ristretto in a lot of the country’s drinks, and it’s typically an easy way to distinguish Australian espresso drinks from New Zealand espresso drinks. What is Silky Milk? A flat white is 1/3 espresso and 2/3 silky milk. The typical ratio of coffee-to-milk is the same as in a cappuccino, but the milk isn’t steamed long enough to form the large frothy layer that characterizes a cappuccino. In some cases, you may find lattes with a larger amount of milk, making them more like a foamless latte. Both Australia and New Zealand lay claim to the invention of the flat white, and I’m not prepared to take a side in that fight. The first recorded sighting of a flat white was in a 1983 review of an Australian cafe, but the use of espresso in place of ristretto is really more of a New Zealand trait.
