About this deal

It’s a soup that takes you far, far away, and it has been a hit at home when the temperatures are cooler. Whilst the laksa broth is simmering, blanch the following in boiling water one after the other: beansprouts for 10 seconds, green beans for 3 minutes and prawns for 90 seconds. You could start conservatively ( 1 jar) if unsure of the brand- some brands are much spicier than others and add more paste to the final broth, to taste. Lime wedges, chili sauce (like Sriracha or sambal) bean sprouts and lots of fresh herbs – cilantro and mint. I’m surprised that there is no one standard noodle used for laksa: egg noodles, rice sticks, vermicelli and glass noodles all feature in the recipes I try.

Using the poaching liquid from the chicken is also another great way to add chicken broth to the laksa soup. galangal: also known as blue ginger or Thai ginger; it has a similarity to ginger -- except that it has a sharp citrus note.
