Using a total of 16 botanicals and distilled using the traditional single copper pot still method, we have created a gin that has a refreshing lemon base, pronounced further by a diverse array of leaves and flowers – including lemon balm – hand foraged on the island and selected to deliver a gentle floral, citrus fresh character. Created with over 100 botanicals we have balanced a complex blend of fruits, florals, herbs and spices. hand-picked local botanicals delicately refine nine berries, barks, seeds and peels during a painfully slow distillation.
