The rums have been hand-blended and then placed in large oak vats for several months to allow the character, flavour and bouquet to fuse together. The 21 year old has been matured entirely in the tropical climate of Jamaica and weaves classic subtle tropical funk with dried fruits, coffee and spice characters. During these years, the Estate was producing several different pot-still rums, and it began to gain a reputation as a reliable source for quality spirits, a reputation that continues to this day.
