By chance de Villermont meet German born, champagne enthusiat Joseph Bollinger and local man Paul Renaudin. Rigorous adherence to their Quality Charter and a refusal to expand supplies to meet the huge demand ensures that Bollinger’s reputation remains intact. Decided to treat myself to a nice bottle of bollinger for Christmas day and really enjoyed it, the flavours were amazing really worth spending extra on a nice bottle of bubbly.I trifle with it if I'm not in a hurry and drink it when I am, otherwise I never touch the stuff unless I am thirsty. Aromatic, with accents of bread dough, smoked almond and crÔme de cassis, this creamy Champagne is lightly chalky in texture and framed by firm acidity, with flavors of glazed apricot, orange blossom and rich hints of clover honey and coffee liqueur. Champagne Bollinger was established in 1829 by Jacques Bollinger and to this day is still family owned and based in the town of Aÿ. This exceptional cuvée, with its distinctive personality, continues to be one of the best entry wines to the range from this house and is a benchmark wine for them.

Bollinger allow their non-vintage to mature on lees for 3-4 years, as they believe that great champagne dominant in Pinot Noir needs time to develop its full character. Bollinger is also allowed to age in cellar, on the lees, for a minimum of 36 months, (twice the legal minimum) before disgorgement, allowing these lees-y, brioche flavours to develop and gain balance.
