The Anova Precision Cooker (WiFi) closely follows at 1000 Watts, and the Anova Precision Cooker Nano comes last at 750 Watts. The flow rate refers to the pump speed, or how fast the sous vide immersion cooker circulates water. The purpose of water circulation is to maintain an even temperature throughout the water bath. It’s super durable. We designed the Anova Precision® Cooker Pro to withstand the harsh environment of a professional kitchen. It's made out of metal and stainless steel, drop tested and has an IPX-7 waterproof rating. Drop the device on the floor or dunk it under water and keep on cooking. The Anova Pro will be an unmatched piece of hardware out of the box, but it will not connect with the mobile app. It was a tough decision to ship Pro before the app was ready, but we didn’t want to deny professionals the chance to start cooking with it immediately. My experience cooking with the Precision Cooker Pro   

The first Anova Pro device was competitive with other professional-grade machines and was developed in a similar manner—we simply made a few adjustments to a lab-grade device. Most devices created for professionals follow this pattern. As a result, pro-grade sous vide devices aren't suited to meet the unique demands of a busy restaurant—They're not built to run nonstop, they break easily, and they’re big and bulky. The Anova Pro will change all that: Anova’s three leading models have quite a few things in common, and you can’t go wrong no matter which you use, but there are a few key differences to point out that might nudge you in one direction or another. Using the built-in, adjustable clamp, we secured the Anova to the side of a pot filled with cool tap water, and then, via the app, instructed the gadget to start heating up the water for our steaks. After nearly 20 minutes, the water reached 129 degrees. We put each of our two steaks in a food-safe plastic storage bag and zipped the bags almost all the way closed, leaving about an inch open; we submerged the bag just below the seal line so that the water pushed the air out of the bag and then fully closed it. However, given the specs of these two devices, the general recommendation by users is up to 4-5 gal (15-19 L) of water.

The type of wireless connectivity of the sous vide immersion cooker will affect how far away you can be to control it. IPX7 water and splash resistance, which means they are fully waterproof and can be fully submerged in water up to about 3 feet (for 30 minutes). So if something happens with the clamp and your sous vide device falls into the bath, you don’t have to worry about it being damaged by water exposure. We couldn’t get the cooker to connect with our phone and had to delete and reinstall the app to fix the issue—annoying. Size: While size isn’t necessarily an indicator of power, it's an important consideration because it can affect what container or pot it can be attached to. Make sure the immersion circulator you have in mind will fit easily in the container you intend to use.
