I’ve been meaning to share this homemade Lorne sausage recipe for a very long time. It’s a very basic Scottish sausage that is usually either served on a roll, or as part of a full Scottish breakfast.

Corned Beef Stovies have also proved popular when we’ve surveyed our Facebook Group members about how they make their Stovies.As always, we’ve tried to stay as traditional as possible so we’ve used leftovers from a roast dinner as a key part to our Stovies recipe.

To cut it down to basics, it's a ground beef sausage meat that was originally moulded in a rectangualr metal tin (I use a loaf tin) to form an oblong with square cross section. When foaming, add the eggs and season with salt. Slowly draw a spatula through the eggs a few times as they set. Remove from the pan while the eggs are still a little runny. You can use it immediately, put it in the fridge to be used within the next two days, or put pieces of baking paper between slices and place them in a container to fully freeze and pull them out to use as you wish.Start by dicing the onion and any peel and chop any extra potatoes you might need, plus a carrot if using. It’s best to use as many leftover roast potatoes as you can so always cook some extras! The exact origins of the Lorne sausage remain unclear. It is often eaten in the Scottish variant of the full breakfast or in a breakfast roll.
