For this recipe you want to use very ripe tomatoes, the more ripe the better. This will give you a richer, more flavourful result.

Don't turn the tomatoes over half way through the roasting as you'll lose the beautiful juices and any pooling balsamic vinegar. For the grilling method: Spread tomatoes cut side up in an oil-coated grill basket or grill pan. Depending on size, grill until charred on both sides (approx. 4-5 minutes total).
