We’d love our own cafe in the future serving filled bagels, great coffee and cakes, as it would be really lovely for Leek - but we’re just seeing where it takes us for now! Husband and wife duo Luke and Caroline Staton joined the rest of the nation baking bread during lockdown - which has evolved into a successful business. Keen to share that learning the book for children is intended to help build their baking confidence and develop their skill set by advising youngsters of their progress.

Caroline bakes around 125 bagels a day, plus 25 beetroot buns for Wild and Wild’s pink rainbow vegan burger. Caroline, 55,and her husband Darrell, whose home is in Garstang, had been running the West Coast Cafe located at the YMCA gym at St Annes. She said: "The first letter from Sophia (in Forget Me Not) was actually my letter to my sister I wrote many years later. In April, the pair were furloughed from their jobs, so chef Luke decided to try his hand at bagels, with Caroline acting as chief taste tester. It concerns an unexpected friendship between two women, one in her thirties and one in her fifties who meet unexpectedly - one escaping the stresses of an uncaring work place, another a toxic relationship.Her impeccable timing means that as she rolls out the final batch of dough, the first is ready to be shaped, boiled and baked.

Rather than give in to despondency when the St Annes cafe she ran with her husband had to close its doors she started to share her recipes online. Now Caroline creates hundreds of bagels and buns a week from her home, and delivers them to cafes and pubs across Staffordshire and Cheshire, such as The Old Mill, in Leek, and Wild and Wild, in Congleton.

I’d been a project manager in the commercial sector for 20 years, but reaching 40 made me rethink my career,” explains Caroline.

The 30-year-old mum-of-twins, from Leek, said: “One day Luke decided he wanted to make bagels - he’s really creative and often comes up with cool ideas and I get to eat it. In the book one of the lead characters Sophia is not willing to discuss the tragic death of a sibling who died in a fall. But it isn’t just the baking, I wanted people that would share my ethos for great service and passion for natural ingredients and passion for baking. In each chapter I start with something really easy - as the sponge cake chapter goes on the cakes get more difficult.

When lockdown came everyone was baking, so I started to share a recipe every day, just different recipes from what I had and what I had baked in the cafe.

Caroline has demonstrated the same grit and determination to become an author as she showed when she qualified as a solicitor as a young mum, studying part time for her exams over seven years while continuing to work. Until then Caroline's working llife had been the law - starting in criminal law and working for a number of different firms, finally dealing with fraudulent road accident claims. Current flavours include the ‘trinity’ maple roasted beetroot, sundried tomato and cheddar, roasted onion and parmesan, alongside multiseed, rum and raisin, oat and treacle, and nacho. At the end of the book there's three pages - a big list of everything they've learned if they've cooked everything.The couple met in the hospitality industry when they were both working at Keele Hall, but never expected to find themselves selling baked goods from their home kitchen. It was followed by Forget Me Not, a book for young adults which has its roots in a family tragedy - the death of Caroline's sister Joanne, 18, from an asthma attack. I shared them on Facebook and that's when my followers grew by the thousands - by the end of the year I had 9,500 followers.
