Indeed, a glowing New York Times piece covered her output, something which is prodigious in both quantity and quality. I will be looking for a copy to purchase: this feels like a book I will pull from the shelf often, for a quick weeknight dinner idea or to satisfy a fit of "must find something new for next week" meal planning.

I do think the type sizing is slightly smaller than would be ideal — cookbook designers, I suspect, forget that cookbooks are often used at much greater distance than regular books: so while size 9 type might be perfect in a novel held close to the head, size 9 type in a cookbook is far from ideal. In fact, some of the happiest hours in my week are when I have something simmering away on the stove, and I have a few minutes to read something or otherwise entertain myself. I have always been a fan of this author for her good basics and sensible recipes that taste delicious. It’s the next best thing to going to a favourite friend’s for dinner and knowing that the food will be delicious, you’re going to love and be nourished by everything, there won’t be a weird fancy table placement and there is no risk that you’ll ever run out of wine. The writing is SO British, like it might be the most British thing I’ve ever read, and that’s fantastic.

But these are midweek meals with a difference; they use ingredient inspired by all sorts of flavours but fuss free. But my life has changed… So I felt it was time for a follow up to Cook Simple, time to offer a new collection of simple dishes that use a wider range of techniques. However, in another demonstration of Diana’s taste, things are arranged to look more documentary than clumsily staged. While I am at it, if you haven't made Henry's Chicken with Lavender Honey and Peaches from her book A Bird in the Hand then you simply must!

Simple Goan Fish Curry ( I was terrified of this for some strange reason, but it turned out to be a highlight. These recipes are inspirational but don’t require out of the ordinary ingredients and they’re not difficult to prepare.

Maybe some searing first before adding the rest of the ingredients into the same pot and popping it into the oven, but in my opinion these recipes ARE incredibly simple recipes packed with flavor from the use of wonderful ingredients.
