The Irish will tell you they invented whiskey-making, and it wasn’t until the Middle Ages that Irish monks brought distilling techniques across the waters to Scotland. Yet that short distance has been far enough that the two whiskeys evolved, over the centuries, into very different styles. Redbreast 21 full of depth and complexity from nose through the finish. The box is made of wood with the story of the whiskey inscribed upon it. Although you can read about it, the tasting of this wonderful dram tells its own story. Same complex tropical leaning fruit from the nose slides through on the palate and again is accompanied by notes of vanilla, spice, a rich single pot still character and a stronger woody presence than the nose. A touch of honey, citrus and a light earthy quality team up with a bit of mint to add interesting facets to this complex palate. You are responsible for all activities through your account. Palate: Unctuous, deep and silky-smooth, with bramble berries and copper to the fore. Develops raisin syrup, porridge, apple pie and hints of clove, cinnamon and wood glue. The sherry shows well without being dominant and the spicy pot still character is present but more restrained than in the exuberant 12 year old.
