I’ve seen this in Melbourne and was always slightly put off by the “Shiraz” - how can Shiraz and gin possibly go together? A piece of lemon peel squeezed over top of the drink will help to keep the drink smelling fresh if it needs to sit out for a few minutes. Another, less spooky, garnish option would be to cut a lemon wheel and add that to the side of the glass. In August 2021 we released our inaugural single vineyard Bloody Underhill Shiraz Gin made in partnership with the incredible Sarah Crowe at Yarra Yering.

A double strain is when you use a regular cocktail strainer, but also add a second, fine mesh cocktail strainer. You may not have heard of a Floradora cocktail before – and that’s ok, we’re not here to make you feel bad! Meet the Four Pillars Bloody Toddy Gin cocktail, a bloody brilliant creation that embraces the season’s allure with every sip. Well we were a yes and lucky for us, Crowey agreed to part ways with some of her very limited Underhill fruit for the second time. To add some heat to their non-alcoholic gin , Four Pillars steamed and vacuumed fresh chilli, which gives it a satisfying alcohol-like kick on the finish.

It isn’t as sweet as sloe gin, but it is a perfect building block to some of Four Pillar’s most unique cocktails.

In this sour cocktail, the flavors of pomegranate and cherry pair perfectly with the Shiraz for a refreshing, fruity flavor. Although Bandwagon Dry is made with exactly the same botanicals as Rare Dry Gin (including juniper, oranges, lemon myrtle and pepperberry), each one is distilled separately so the flavour and quality can be controlled before they’re mixed together. Try the Fee Brothers Fee Foam, or you can use a little aquafaba (the liquid from a can of chick peas).Add 50ml Bloody Bandwagon, 20ml fresh lemon juice, 15ml sugar syrup and a dash of egg white (or aquafaba if you’re making a vegan-friendly mocktail) to a cocktail shaker. The tannins are stronger and the Amaro-like bitterness adds a dryness that makes this very sippable. The sweetness of our Bloody Shiraz Gin is balanced by the tangy zest of lime juice, while the Maraschino liqueur adds a touch of sophistication to the mix. It uses only a few ingredients and very little effort to make this bloody delicious drink – you only need a lime and some ginger beer (and our Bloody Shiraz Gin of course! The rich, spicy Shiraz grape character hits you immediately, with cranberries and Christmassy spices.
