To reinforce that comparison, sylvaner, muscat, müller-thurgau and pinot gris (grigio) are also to be found here. The best time to see tonight’s dazzling display will be just after the Moon rises, while it is still close to the horizon and appears to be much larger than normal.Proving that great, layered refreshing fizz can be found within Prosecco – a sparkling made by re-fermenting the wine in a pressurized vat – was this class-leading Brut example from top producer Andreola. As distinct from the centuries-old vinification style of bottle fermentation, which is employed in traditional method wines like Champagne and Cava, the majority of Prosecco is made using the Charmat method—which utilizes pressurized tanks for the second fermentation (in which carbon dioxide is produced, resulting in natural bubbles once the bottle is popped). Make sure you have your glasses ready and within easy reach. Then, take your bottle and remove the foil; there should be a tag or perforation line to make this easy and neat.

Housed in a gold-coloured bottle, no Prosecco does bling better than Bottega. But don’t think that it’s all style over substance, as this fizz has repeatedly proven to be a gold-quality product too, with plenty of peachy fruit, a lovely orange zest lift, and a persistent, dry finish. It’s a fruity but not too sweet style of Prosecco with masses of freshness. What’s important about these Proseccos is that the brands below were sampled without prior knowledge as to their source – the sparklers were tasted ‘blind’, which removes any risk of prejudicial judgments, which we believe is vital for the fair and accurate quality assessment of drinks.
