Creamy and indulgent, this vegan butterscotch pudding is really simple, and made with just six basic ingredients. And because it only takes 15 mins or so to cook (plus a bit of time in the fridge to chill), it's perfect as a weekday dessert, Sunday teatime treat, or even as a kids' party pudding!

When I was younger I never really understood why there were so many different names for caramel. Toffee? Butterscotch? Surely they are all the same thing?! Well, now I am older I have obviously realised that they are not. However, I know some people also don’t know the difference so here’s the little lesson on all things similar. I used to have this as a child and I remember it was simply divine. It was actually one of the most delicious treats and I preferred it to anything else.
